Winter Curry


Losing weight in the winter can be a pain when all you want is stodge and to binge watching Netflix



Whilst there isn’t too much I can do to stop the Netflix addiction, I can help you with some comforting food which can help you lose weight- and did I mention it’s a curry?

This Winter Curry is super easy and can be left to cook while you get on with your day, or talk to your mates, and being low carb and calorie it is diet friendly BUT packed with flavour. It is super high in protein and fibre meaning you’ll feel full and satisfied, AND you’ll have less cravings for junk!

Ingredients

(Serves 4)


– 500ml Alpro almond and coconut milk ( almond or coconut on their own also works well too)

– 2 tins of chopped tomatoes

– 4 carrots – Peeled and sliced into thin pieces

– 1 400g tin of haricot beans, drained

– 1 bag of spinach (200g)

– 3 teaspoons of turmeric

-3 teaspoons of ground cumin

– 2 teaspoons of chilli flakes

– salt and pepper

-640g Chicken breast, chopped into chunks


Prep time : 5 mins

Cooking time : 60 mins


Method


1.Grab a large pan and add the with the coconut milk, tinned tomatoes, carrots, turmeric, cumin, chilli, salt and pepper. Mix everything together and place the lid on the pan. Bring this mix to the boil, then turn it down to a simmer and let it cook for about an hour.


2.Whilst this is cooking, fry the chicken, using low calorie cooking spray. I suggest doing this whilst the mixture above is coming to a boil, as it means once the chicken is done, everything can be left for a while ( just remember to cover the chicken once cooked!)


3.About fifteen minutes before the end, stir in the beans .

NOTES

Easily reheated- I use 600W for 8 minutes-

You can add peas to the bottom of the bowl when reheating, to pack even more volume and veggies in!
