Strawberry Chicken and Avocado Salad!

How often have you looked at your lunch and actually felt a bit depressed?!

Really, this is completely understandable- We all like things to be tasty and, food and otherwise, we like pretty things!

if you have a colourful plate with a lot of variation, you will feel much more satisfied ( and not deprived!) with your choices. And of course if you have food that tastes good, you’ll look forward to eating it!

This means you will find it so much easier to lose weight, because you are enjoying the food you DO eat , rather than craving and focusing on the food you USED to eat.

Really take time to appreciate how energized this food makes you feel after! If you hang on to this feeling, again you will look forward to eating it even more next time!

This dish is no exception- chicken and strawberries is an awesome combination trust me! Again its easy to throw together; its literally a case of frying the chicken, chopping up some fruit and veg, and you are done.

This is a great meal for two or will be fantastic as a meal prep for lunch on a busy week- for the latter just chop up the avocado and strawberries in the morning ( 1 minute job!).

(Serves 2)


  • ½ tsp Smoked paprika

  • ½ tsp Garlic powder

  • A pinch of thyme

  • ½ avocado

  • ½ cucumber

  • Two large handfuls of strawberries

  • Half a bag of spinach

  • 2 TBSP Low fat honey and mustard dressing ( this one is great)

  • 320g Chicken breast ( chopped up or just buy the mini fillets)

  • 10g butter ( I use Kerrygold)

(Salt and pepper to taste)

Prep time: 5 mins

Cooking time: 5-10min


1. Fry the chicken in the butter, with the garlic powder, smoked paprika and thyme until the chicken is cooked through ( do check this by ensuring its not pink in the middle J )

2. Chop up the cucumber , avocado and strawberries and add to the spinach

3. Add the chicken on top, pour on the dressing
