It’s time to give up the perceptions of healthy food as boring diet food; if you are eating food you enjoy , you will be able to stick to your diet, and achieve weight loss that stays off. If you start cutting out carbs, and base your meals on bland lettuce leaves and chicken breast, by the weekend, or two weeks down the line if you are lucky, you’ll be face down in that takeaway. It is that simple.


This Mexican wrap is super filling ( arguably too much filling for the wrap, but there’s worse problems to have!) and you have 4 lunches in less than 15 minutes- this means one less thing to stress out about during a busy day.

INGREDIENTS


640g Chicken breast

1 tbsp kerrygold butter (vegetable or rapeseed oil would be fine too)

1 red onion

2 peppers ( different colours)

2 tsp smoked paprika

2 tsp cumin

1 tbsp chipotle paste

200ml passata

2 tbsp brown sugar

2 tbsp white wine vinegar

4 flour tortillas ( Old el paso regular tortillas work well)



METHOD


1) Melt the butter in a wok or frying pan on a high heat then add the peppers for two minutes

2) Add the onion and fry for a further minute

3) Add the chicken and fry until the chicken isn’t pink in the middle ( about 5 minutes)

4) Add the spices, sugar, passata and vinegar and drop to a medium heat, leave for 5 minutes

5) Done!
