Jerk Chicken

When you’re trying to lose weight, chicken is the go-to


You’ve been told it’s lean


You’ve been told it’s a great source of protein- you’ve heard that helps for weight loss too


But it’s also BORING


My aim is to ensure women get a lifestyle improvement, rather than a strict diet regime


So of course this doesn’t tally with a boiled chicken breast and some broccoli





So I ensure the meal plans I give my clients have tasty , quick recipes- STOPPING the feelings of resentment and deprivation around “ diet” food, so that they can actually enjoy their food- and in turn, FINALLY lose weight that stay off .


This Jerk Chicken recipe below is no exception. Oh and its got carbs in too – yes you can have these AND lose weight!


(Serves 3)


320g chicken breast fillets


1Tbsp Jerk Seasoning ( Levi Roots do a great one )


Thumb sized piece of ginger 


2 Cloves of garlic


2 tbsp coconut cream


5 thyme sprigs (pick off the leaves)


2 tsp olive oil 


2 peppers


2 red onions 


Zest and juice of one lime


2x 125g Uncle Bens Mexican rice pots (take 60secs)


1.Preheat the oven to 220c


2.Using a food processor or blender- combine jerk seasoning, coconut cream, chilli, thyme, garlic, ginger, lime and lime zest until it forms a paste


3.Grab your chicken and rub the paste into this. Best thing to do here is to put into a bowl and keep flipping the chicken until evenly covered


4.Chop up the peppers and onions, add to a baking tray, along with the chicken


5.Drizzle the chicken and veggies with the oil, and add some salt and pepper


6. Put in the oven, leave for 10 minutes, then give the tray a little shake, before cooking for a further 10 minutes


Serve on a bed of spinach
