Japanese Curry
Serves 2
Ingredients
A head of broccoli , florets halved
2 Tbsp groundnut oil 2 tbsp
200g chicken breast, cut into chunks
200g, baby button mushrooms quartered
4 spring onions chopped
1 clove of garlic. crushed
1 Tbsp mild curry powder
1 Tbsp white miso paste
300 ml chicken stock
250g pack Microwaveable Basmati rice
Bring a pan of water to the boil, then turn off the heat, add the broccoli in a bowl, leave for 5 minutes. Drain.
Whilst the brocolli is in the bowl, heat 1 tbsp of oil in a non-stick frying pan and cook the chicken for 2-3 minutes or until golden. Scoop out. Add the button mushrooms and cook for 2-3 minutes or until golden, then scoop out. Add the spring onion, garlic, and the other tbsp of oil. Cook for 2-3 minutes, then return the chicken and mushrooms to the pan. Stir in the curry powder and cook for one minute.
Add the miso paste and stock. Bring to a boil then turn down to a simmer and cook over a medium heat for 12 minutes.
Add the broccoli , cook for 2-3 minutes. Serve with the rice
