Italian Chicken

Adapt Italian recipes to make them fat loss friendly!

This one is an easy , low maintenance meal for two, that’s also low carb and low calorie- just to show you can have an enjoyable night in and stay on track. If you lead a super busy life, my tip is to leave this to simmer and cook, and just get on with the million and one things you want or need to do; so this one would be perfect on a Monday evening or mid week when you are particularly short on time.

Like most of my recipes, this one works well reheated for week day lunches, or can be doubled up to make 4 meals.

· 240g Cooked chicken breast- easily available at most supermarkets

· 125g Mozerella ( Low fat- e.g Sainsburys Be Good To Yourself)

· One onion , chopped

· One garlic clove, chopped

· 1 tbsp Olive Oil

· 2X 400g can chopped tomatoes

· 1 tsp Stevia ( start here and add ½ tsp to taste)

· 1 tsp dried oregano

· Splash sherry vinegar

· Salt and pepper to taste

1. Fry the onion and garlic in the oil for about 2 mins

2. Drop down the heat to a simmer and add the chopped tomatoes , oregano, stevia and vinegar, and leave on this heat for 20 mins, then add the chicken

3. Transfer to a baking dish and add the chunks of mozerella ( can chop with a knife or just tear into chunks

4. Heat oven to 220C ( 200 Fan assisted) and cook for 20 minutes

5. Done!
